TrekAmerica's favourite campsite recipes

  • Cooking on a campfire

Our camping tours are made extra cost-effective by the 'food kitty' and group cooking system. At the beginning of the tour, everyone adds their cash to the kitty, and the group will shop, cook and eat together. As well as saving you money, it's also a really fun way to bond with your travel buddies!

Splitting the whole group into sets of 2-4, everyone takes their turn at choosing what to cook for the group and serving up a Masterchef masterpiece. If you've not really cooked before, it can be a bit daunting - but your tour leader will be on hand to advise! All kitchen kit and equipment is provided, so all you need is some creative ideas - and that's where we come in...

To help you get ahead, we've shared three of our favourite campsite recipes below. All can be easily adapted for dietary needs e.g cooking meat in different pans and adding later), and your tour leader will help you work out how much of each ingredient to buy for the group size.

Time to channel your inner Gordon/Jamie/Nigella - TrekAmerica Masterchef starts here!

You'll need:
Minced beef (you could use soy mince for a vegetarian option)
Kidney beans (either to add, or as a veggie option)
Large tortilla wraps
Tomato salsa

Slice the onions and peppers into strips
Heat oil in a pan, and stir fry the mince until brown
Add in the onions and peppers, continuing to stir fry the mixture
Meanwhile, heat the kidney beans in a small pan
Serve on warmed tortillas, adding lettuce, cheese, guacamole and salsa to taste and roll 'em up!

Thai Green Curry

Thai Green Curry

If you're looking to impress with your international food offerings, a Thai Green Curry is your dish! Using a ready-made curry paste cuts down prep time, meaning you'll be enjoying your curry just as the campfire gets going!

You'll need:
Chicken breast
Thai green curry paste
Fish sauce
Coconut milk
Green beans
Baby corn
Sugar snap peas
Rice (boil-in-the-bag works best)

Place the rice in a large pot with boiling water and cook until ready to eat
Heat oil in a wok and add the curry paste. Stir in the chicken and cook until chicken has browned on all sides
Add the coconut milk and fish sauce and stir well. Simmer for 8-10 minutes
Add the vegetables and simmer for another 2-3 minutes, until vegetables are tender
Serve the curry mixture with rice and enjoy!

(If you have vegetarians in the group - add the curry paste and coconut milk to the vegetables instead, cooking in a seperate pan to chicken and not adding fish sauce)

Slice chicken breast into small chunks
Heat some oil in a wok, and once hot, add the chicken, stirring occasionally until cooked through
Place noodles into boiling water in one large pot
In a large pan, heat oil and fry the vegetables. Stir in the sauce and add the cooked chicken
Drain the noodles, place in a large bowl and serve
